Meet the delicious sea fennel

Did you know that fleshy sea fennel leaves can be cooked, pickled, added to salads, or prepared with risotto and used as a spice? Sea fennel (lat. Crithmum maritimum L.) is a plant you probably know from the coast and islands.

The stem is woody and the leaves are fleshy and aromatic. It develops greenish-yellow flowers in August and September — best picked young, in May and June. Young and fresh sea fennel is excellent raw, as an addition to salads, risotto, or any other Mediterranean food.

Pulic — Istrian donkey meat

In Istria, it was customary to put a red ribbon around the neck of a puppy — a young donkey — when it was born. When a one-year-old reached a weight of about 100 kg, the butcher would take it through the village and each family would order their share.

Nowadays, young donkey meat is a real specialty. It belongs to traditional Istrian cuisine, it is highly valued around the world, and a delicacy that you must not miss.

The magic of truffles

Truffles are a widely known culinary trump card that will leave few indifferent. Since the truffle was discovered in the Motovun forest 80 years ago, it has not ceased to be a gastro hit of northwestern Istria.

Thousands of gourmets flock to the taverns that serve it, and the magical truffle cult fuels the popular belief about its aphrodisiac powers. Immediately after extraction, fresh truffles are used directly as a food additive — or crafted into spreads, cheeses, oils, and sweet delicacies.
